Homemade Baked Beans

Baked beans are a staple at summer gatherings. While Bush’s Baked Beans are quite tasty, they still don’t surpass a pan of delicious homemade beans made from this recipe. My former mother-in-law shared this recipe with me. I don’t make them as often since it is just my husband and I at home, but when I have the chance to share for a pot luck picnic I enjoy taking these. I like to make them the day before to let the flavors blend and then warm them up just before serving.

Homemade Baked Beans

  •  2 lbs dried lima beans
  • 3 qts water
  • large onion, finely chopped
  • 1 C dark corn syrup
  • ½ C barbeque sauce
  • ½ C catsup
  • ½ C dark brown sugar
  • 1 tsp salt
  • 1 tsp dry mustard
  • ½ tsp pepper
  • 1/4 tsp ginger
  • 2 T black strap molasses
  • About 1 lb bacon

In and 8 qt pan, cover and soak beans overnight. Do not drain. Rapidly bring covered beans to a boil. Skim off foam and simmer, uncovered for 1 hour or until tender. Stir in remaining ingredients, except bacon. Pour beans into a 17x11x2 pan. Cut bacon in smaller slices and lay bacon slices over the top of beans.

Bake uncovered at 300º for 1½ to 2 hours until tender and of desired consistency. After first hour, stir occasionally. If beans seem to dry stir in water and continue baking. 

To warm them up the next day cover with foil and Bake at 325º about 30 minutes or until warm.
