Batter For Vegetables

This is an easy batter to use when deep frying.

  • 3/4 C cornstarch
  • 1/4 C flour
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp Adobo
  • ½ C water
  • 1 egg, slightly beaten
  • 4 C crisp vegetables

Preheat deep fryer or electric skillet containing Mazola oil to 375º.  Add dry ingredients in a bowl, whisk gently to mix well. Add egg and water. Stir until ingredients are combined. Batter will be thick. Dip vegetables in batter and fry until tender. If using stove top, use cast iron skillet with heat on medium high.

In addition to vegetables, batter can be used for chicken strips and shrimp. For shrimp and onion rings you can make a beer batter by substituting beer for the water.
