Baked Pineapple and Baked Corn, Favorite Sides!

These two recipes are family favorites as side dishes with baked ham. Both can be doubled to feed a larger crowd. Enjoy!

Baked Pineapple

1 stick butter
3 eggs
1/2 cup milk
2 cups sugar
20 oz. can crushed unsweetened pineapple
4 cups dry bread cubes
Melt butter in a 9×9 casserole dish. In a bowl beat eggs, then mix in milk, sugar and pineapple. Blend well. Add bread cubes and stir until coated. Pour in casserole dish. Bake at 350 degrees for 45 minutes or until firm and lightly browned on top.

Baked Corn

2 cups fresh or frozen corn
1 TBS flour
3 TBS sugar
2 eggs
3/4 tsp salt
3/4 cup milk
1/2 stick butter
Combine all ingredients in a food processor to mix well and chop corn. Pour in to a well greased casserole dish. Dot with a little more butter and sprinkle with paprika. Bake at 350 degrees for one hour or until firm in center and lightly browned on top.
