Whoopie Pies

Whoopie Pies are a favorite treat here in Pennsylvania Dutch Country.




  • 1 cup Crisco
  • 2 cups sugar
  • 2 eggs
  • 2 egg yolks
  • 1 tsp salt
  • 2 tsp baking soda
  • 1 cup sour milk *
  • 1 cup water
  • 1 tsp vanilla
  • 4-5 cups flour
  • 1 tsp baking powder
  • 1/2 cup cocoa

Beat Crisco, sugar, eggs and salt. Stir baking soda in to milk and add to egg mixture along with water and vanilla. In another bowl, sift 4 cups flour, baking powder and cocoa. Stir in to wet ingredients. Stir until stiff, adding up to one cup more sifted flour if needed. Batter should be thick and stiff. Drop by spoonfuls on to a greased cookie sheet. Bake 5 minutes at 350 degrees. Cool on racks.


  • 2 large egg whites
  • 2 TBS vanilla
  • 4 TBS flour
  • 1 box 10X sugar (4 cups + 2 TBS)
  • 4 TBS milk
  • 1 1/2 cup Crisco

Beat all ingredients until smooth and well blended. Spread on the flat side of one cookie. Top with a second cookie to make a sandwich.

Makes 3-4 dozen Whoopie Pies, depending on size.

* To make sour milk, put 1 TBS vinegar (or lemon juice if you prefer) in a glass one cup measuring cup. Add enough regular milk to make 1 cup.  Let stand for at least 15 minutes to allow it to curdle.
