Ham Pineapple Loaves

  • 1 pound ground smoked ham
  • 1/2 pound ground fresh pork
  • 1/2 cup coarse cracker crumbs (8 saltines)
  • 1/4 cup chopped onion
  • 1/4 cup milk
  • 1 egg
  • 1 tablespoon parsley
  • dash of pepper
  • 6 pineapple slices

Preheat over to 325 degrees. In a large mixing bowl, combine all ingredients except the pineapple slices. Divide and shape in to 6 patties and place in a greased baking dish. Place a pineapple slice on top of each patty.

Glaze

  •  1 cup brown sugar
  • 1/4 cup pineapple juice
  • 1 tablespoon white vinegar
  • 1 teaspoon prepared mustard

Mix glaze ingredients together until well blended. Spoon evenly over the ham patties. Place in preheated oven and bake for one hour.  Baste patties with glaze during baking.

NOTE: If you want extra glaze to serve warm with the patties, double the glaze recipe.

My mom served these with candied sweet potatoes and fresh green beans.  What a tasty meal!
