Chicken Cacciatore with Potatoes O’Brien

Chicken Cacciatore

  • 3 lbs cut up chicken
  • flour
  • 2 TBS oil
  • 1 pkg Good Seasons Italian Dressing Mix or Homemade Recipe Below*
  • 6 oz. can tomato paste
  • 1 1/2 cup water
  • 1/2 cup dry white wine
  • 1/4 lb fresh mushrooms, sliced (4oz can sliced)

Wash chicken. Dredge in flour. Add to skillet that oil has been heated in. Brown well. Remove chicken from skillet. Add dressing mix, tomato paste, water and wine to skillet. Cook and stir over medium heat until mixture comes to a boil. Return chicken to skillet, cover and simmer gently about 45 minutes. Add mushrooms and continue to cook for 15 minutes. If needed, add a little more water during cooking. Remove chicken to serving platter and spoon sauce over top of chicken.

Homemade Italian Dressing Mix – Use all of this for Chicken Cacciatore Recipe

  • 1 tablespoon garlic salt
  • 1 tablespoon onion powder
  • 1 tablespoon white sugar
  • 2 tablespoons dried oregano
  • 1 teaspoon ground black pepper
  • 1/4 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 tablespoon dried parsley
  • 1/4 teaspoon celery salt
  • 2 tablespoons salt

Combine all the ingredients in a container that has a tight lid. Shake well to mix. Store until needed for recipes.

To use the mix to make Italian Salad Dressing:
1/4 white vinegar
2/3 cup oil of choice
2 tablespoons water
2 tablespoons Italian Dressing mix.
Put all ingredients in a salad cruet and shake to mix well. Refrigerate before serving.

Potatoes O’Brien

6-8 large potatoes, peeled and diced
1 large green pepper, chopped
2 TBS flour
1 tsp salt
1/4 tsp pepper
1 pint milk
1/2 cup grated cheese (I use 1 cup)

Combine potatoes and peppers. Add to greased baking dish. Mix flour, salt and pepper and sprinkle over potatoes and peppers. Slowly pour milk over potatoes and peppers. Sprinkle cheese over top of all. Bake 1 hour at 350 degrees.
