Applesauce Cake

Applesauce Cake

  • 1/2 cup butter
  • 1 cup sugar
  • 1 cup applesauce
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
Plump raisins in rum a few hours or overnight.  Preheat oven to 350 degrees. Grease and flour an 8 inch square pan. Cream butter and sugar. Add applesauce. Beat until well blended.  Stir in flour, soda and spices. Drain any remaining rum from raisins. Fold in raisins and nuts. Spoon in to the cake pan.  Bake 40-45 minutes, until tester comes out clean, at 350 degrees.

Serve warm. Sprinkle powdered sugar on top of cake before serving. Also good topped with a scoop of vanilla ice cream.
